A Japanese-owned food trailer, Nara Japanese Kitchen, has set up at The Village Food Truck Park in Fletcher, North Carolina, aiming to bring scratch-made Japanese street food to the Asheville-area market, according to the Asheville Citizen Times. The trailer’s menu runs bento boxes with teriyaki chicken, tuna mayo onigiri, Japanese omelet, sesame greens, karaage and yakisoba, built around what the operators describe as the chef’s own teriyaki sauce recipe.
Nara operates weekdays, 9 a.m. to 3 p.m., at the park’s 25 Fletcher Commercial Drive address. The Village Food Truck Park itself opened in 2023, when developer Bob Turner converted a vacant self-serve car wash into a multi-vendor lot with an on-site commissary kitchen — prep tables, walk-in storage, a three-compartment sink and grease/gray-water disposal — meant to lower the overhead of running a truck without a standalone commercial kitchen. Early tenants included Bridge and Tunnel Coffee Co. and El Bodegon; Nara is now part of that same shared-infrastructure model, three years into the park’s run.
Why it matters: This is the low-capital entry point BoothEconomy tracks in miniature — a specialty-cuisine operator skipping the standalone restaurant lease entirely and instead renting a spot at a lot that already has the commissary kitchen, plumbing and foot traffic built in. For a niche menu like scratch-made Japanese street food, that shared infrastructure is what makes testing a market at all financially sane: the fixed costs of grease traps and prep space get spread across every vendor on the lot instead of carried by one.
