Ramirez, shop manager Cody Madole, and four other employees handle the full build in-house — plumbing, welding, electrical — converting commercial vans and box trucks into working mobile kitchens from scratch. The client list spans both ends of the vendor economy: Long Beach dessert shop SnoCorner and Peruvian food truck Mikhuna on one side, 30- and 40-foot catering rigs for Google and Monster Energy on the other. Ramirez also partners with Louis Lombardi on a pizza truck under the Avalou’s Italian Pizza banner, and previously co-ran LA Tacos and Co. himself — background that came originally from home remodeling and metal fabrication work.

One notable shift in the shop’s recent builds: Ramirez has been steering clients away from gas generators and toward solar-powered battery systems with remote troubleshooting, cutting fuel costs and noise for vendors running long festival or catering days.

Why it matters: Every op-ed about the food truck boom focuses on the vendors themselves — the concept, the menu, the Instagram following. Shops like California Food Trucks are the invisible layer underneath that boom: the fabricators who determine how fast a new vendor can actually get on the street, what a build costs, and increasingly, whether that vendor is running on a generator or a battery. A five-person shop building rigs for both a two-person dessert cart and Google’s corporate catering fleet is a good proxy for how wide the food truck economy has actually gotten.
